Melbourne’s newest oyster bar will rock your world with its extensive wine list

An intimate oyster bar has opened in an arcade in Melbourne’s busy Bourke Street, that will be the go-to for any gourmand. Jeremy Schinck and Malcolm Singh, behind Pinchy’s Champagne & Lobster Bar, have stepped things up with the launch of Melbourne’s newest bar, Pearl Chablis & Oyster Bar.

Right next door to Pinchy’s, this opulent 30-seat space will serve fresh, seasonal, premium oysters sourced from the best growers along NSW’s Oyster Coast, while you sip on wine from Chablis, the northernmost wine district of the Burgundy region. And, there are more than 500 Burgundy wines – all expertly matched to complement the Oyster du Jour. 

Oyster varieties include deep-water angasi, sea urchins and periwinkles, presented in various ways with finishes that promise to excite the palate.

Each month, Pearl will also celebrate one Chablis producer, hand-picking a region and vintage (AC Chablis, Premier Cru and Grand Cru) to give wine lovers the opportunity to taste a rare drop.

The menu

Aside from the oysters, order caviar by the gram or jar or decadent bites including duck liver parfait, beef tartare and poached Murray Cod.

To go all out, try The Pearl Caviar Experience for a whole lobster with 100 grams of Russian osetra caviar and 100 grams of Siberian caviar – you’ll need to get in early for this extravagant affair, booking 24 hours in advance.

What this small bar lacks in size, it makes up for in style

The design

This space might be small, but its opulence is undeniable. Expect a contemporary space with references to elements of the ocean. Draped linen and plush muted, ocean-green upholstery are balanced with a centrepiece green marble bench, natural stone paving, lime-washed timber and distressed metal and textural rendered walls. Perch at the bar with the day’s fresh selection of oysters presented on ice in front of you, or find a seat at the high tables surrounded by a library of prestigious French wine on display.
